In this video, Betty demonstrates how to make Autumn Pumpkin Molasses Muffins, using sorghum in the place of molasses. I purchased a jar of sorghum at the 3rd Annual Sorghum Festival in Richmond, Kentucky, that Rick and I attended. (You can see the sorghum festival in the previous video.) These muffins are made with sorghum, but I am going to write up the recipe with molasses, because the two syrups taste very much the same, and I think it will be easier for you to find molasses! Ingredients: ½ cup butter or margarine, softened ¾ cup firmly packed brown sugar 1 cup canned pumpkin ¼ cup molasses 1 egg 1 ¾ cups self-rising flour ¾ teaspoon baking soda ½ cup chopped pecans cooking oil spray In a large bowl, cream ½ cup butter or margarine with ¾ cup brown sugar, and then beat with an electric mixer until smooth. Add 1 cup canned pumpkin, ¼ cup molasses, and 1 egg. Beat well. Combine 1 ¾ cups self-rising flour and ¾ teaspoon baking soda. Add to butter mixture, and stir until dry ingredients are moistened. Stir in ½ cup pecans. Spoon batter into muffin pans that have been sprayed with cooking oil spray, filling two-thirds full. Bake at 375 degrees for 20 minutes. Let cool slightly in pan, and then remove to a nice serving plate. These muffins are scrumptious on a fall day, along with a mug of hot apple cider!

This tarts recipe allows you to make lemon tarts and jam tarts. The ingredients for making 12-14 jam and lemon tarts are as follows: 375g sweet shortcrust pastry 300g jam or lemon curd A touch of butter, for greasing A touch of plain flour, for dusting Adding most of the jam after the pastry has been baked gives a much more professional finish to the tarts — a nice crisp pastry case and very full of jam/lemon curd with a lovely smooth surface. This method also stops the jam from boiling over in the pastry and spilling all over the place, which in turn makes the washing up a little easier! Please take good care when using hot jam or lemon curd as they may reach a very high temperatures. Take even more care if children are helping with the baking.
In this video, Betty demonstrates how to make Borden’s Magic French Fudge. Borden’s came out with this recipe at least 20 years ago, and I have made it quite often. It is the *easiest,* *quickest,* and *most delicious* fudge that I have found. I thought you might enjoy great fudge, without the hassle of beating it! Ingredients: 12 oz. package semisweet chocolate chips 14 oz. can Eagle Brand sweetened condensed milk 1 ½ teaspoons vanilla extract dash of salt ½ cup chopped nuts, optional (I used chopped pecans.) In the top of a double boiler, melt chocolate over hot water. Remove from heat. Add sweetened condensed milk, vanilla, salt, and, if desired, nuts. Stir until smooth. Turn into a waxed paper-lined 8-inch square pan. (I used a 9-inch square pan, sprayed with cooking oil, which worked well.) Chill. Cut into pieces and store in an airtight container. This fudge *never* fails! It is a great fudge to make when you want to make, if you want to make sure you are successful. Everybody loves it! Enjoy!!! Have a happy day! –Betty

This is a really fresh and flavourful dish that’s very easy to prepare and which is well liked by children because of the tuna and the fun little mozzarella balls. Let’s see what we’ll ingredients we’ll need to make it. • 9 oz of cherry tomatoes • 1 cup of tinned tuna • 7 oz of small mozzarella — or cubed mozzarella • Salt, pepper • Extra virgin olive oil as needed • 2 and ¾ cupsof bow-tie pasta or whatever shape you like for pasta sala • 1/3 cup of pitted black olives • 20 basil leaves Let’s make our Mediterranean pasta salad.
