Betty's Egg-in-the-Nest Breakfast Recipe

In this video, Betty demonstrates how to make an old favorite, “Egg-in-the-Nest.” This is known by many other names (also in many other countries), and is a favorite breakfast dish for children (young and old)! Ingredients: 1 tablespoon butter or margarine 1 large slice bread (I prefer Hearty White, but you may use any type of bread that you like.) 1 egg, uncooked salt and pepper, to taste Lightly butter both sides of a slice of bread. Now, take a large biscuit cutter (smaller in diameter than the width of the bread), and cut a circle from the center of the slice of bread. Set it aside. Next, heat a skillet, and place the slice of bread and the circle in the skillet separately. Break an egg into the hole left in the middle of the bread slice. Salt and pepper the egg, to taste. You make break the egg yolk if you choose. Also, if the egg runs under the slice of bread and makes contact with the skillet, that’s okay. Tend to the bread slice (containing the egg) and also to the bread circle, and turn them when they brown on the under side. Continue to cook, until the egg is desired doneness and the bread is crisp. Remove the “Egg-in-the-Nest” and the toasted bread circle, and place them on a serving plate. Accompany this entree with hash brown potatoes, fresh strawberries with Splenda, and Swiss truffle hot chocolate–or other breakfast accompaniments of your choice. A filling and interesting way to start the day; also great to make for (and with) children!

Barbecue Dry Rub Recipe for Pork by the BBQ Pit Boys

This is a classic Dry Rub recipe for pork ribs, butts, loins, and chops. Start with this recipe and then adjust the ingredients, spices, and quantities to make it your own special barbeque rub. Mix together 1/4 cup Paprika, 1/8 cup Fresh Ground Black Pepper, 1-2 tablespoons Garlic Powder, 1-2 tablespoons Onion Powder, 1 tablespoon or more Cayenne Pepper, 1/4 cup Coarse Salt. 1/4 cup Brown or White Sugar. Eight Apple Cake Recipe – Crumbs

Good for: Your breakfast (with coffee) or a pudding for the kids! Recipe Below: Start to finish: Just over 1 hour (including peeling and baking) Serves: Eight or twelve decent slices 8 eating apples — peeled, cored and chopped (you need about 450g of apples) Juice from one lemon ½ teaspoon ground cinnamon 200g plain flour 1 ½ teaspoon baking powder 200g caster sugar 3 eggs 6 level tablespoons of melted butter 1-2 tablespoon milk, as needed 1 tablespoon of Demerara sugar for topping Heat oven to 180C/350F Grease and line a 20cm square cake tin. Toss the apples in the lemon juice and ground cinnamon the minute they’re chopped. Combine the rest of the dry ingredients in a bowl. Add the eggs and butter and beat to make a stiff batter. Add milk if it seems a bit dry. Fold the apples (and any remaining lemon juice) into the batter. Pour into the cake tin, smooth down and sprinkle with Demerara sugar. Bake for 45 to 50 minutes or until a skewer comes out clean. Betty’s Cheesy Green Bean Casserole Recipe

In this video, Betty demonstrates how to make an American classic, Campbells Soups Green Bean Casserole. A delicious blend of mushroom soup and onion crisps over green beans, this version also has sharp Cheddar cheese and chopped red bell pepper. It is great for holiday meals! Ingredients: 10.75 oz. can condensed cream of mushroom soup ½ cup milk Dash ground black pepper 4 cups cooked cut green beans (I used two 15 oz. cans, drained) ¼ cup red bell pepper, chopped 1 1/3 cups French fried onions, divided (These come in a can, or you can make your own.) ¾ cup shredded sharp Cheddar cheese, divided In a large bowl, stir 10.75 oz. cream of mushroom soup, ½ cup milk, dash black pepper, 2 cans drained green beans, ¼ cup chopped red bell pepper, 2/3 cup French fried onions, and ½ cup Cheddar cheese. Bake at 350 degrees for 25 minutes, or until the bean mixture is hot and bubbling. In a small bowl, mix the remaining 2/3 cup of French fried onions and ¼ cup shredded Cheddar cheese. Sprinkle over the top of the casserole. Bake for 5 minutes, or until the topping is golden brown. Remove from the oven and serve immediately. This is a wonderful casserole, particularly for people who think they dont like vegetables! –Betty 

Ingredients for icing: 2 1/2 cups of icing sugar 2 1/2 tablespoons of butter 1 teaspoon of caramel flavouring milk to get the consistency you desire (about 1/8 of a cup) red food colouring Bake in fan forced oven @ 160 degrees celsius, 180 non-fan forced for about 15-20 mins. Check them by inserting a skewer into the centre. When it comes out clean, they are ready. Each oven is very different so after 15 mins, keep an eye on them :)
