Betty’s Fruit and Lemonade Slushie

In this video, Betty demonstrates how to make a Fruit and Lemonade Slushie. The lemonade is sugar-free (if you desire), and the fruit may be varied to suit your taste. Ingredients (for 1 large slushie): ¼ cup cold lemon juice (I used Realemon, which is 100% lemon juice from concentrate.) ¼ cup cold water ½ cup sugar or sugar substitute (I used Stevia.) 2 cups cold water about 2 cups of frozen fruit, as desired (I used one sliced banana and an equal amount of halved strawberries and an equal amount of blackberries—all frozen in pieces, for about 6 hours or longer.) Make concentrated lemonade syrup by combining ½ cup lemon juice, ¼ cup water, and ½ cup sugar or sugar substitute. You may refrigerate this and use it to make lemonade by the glass by just adding 2 or 3 tablespoonfuls to ice and cold water, to taste. For making the Fruit and Lemonade Slushie, make lemonade by adding all of the concentrated lemonade syrup to 2 cups of cold water and set aside. Place frozen banana slices, frozen strawberry halves, and frozen blackberries in a blender. Add 1 cup of prepared lemonade. With the lid on the blender, pulse the frozen fruits and lemonade until the mixture is thick and smooth. If you like it thinner, just blend in more lemonade. You will need to use a spatula to loosen the fruit and lemonade mix a few times during the blending process. Betty’s Sweet and Crunchy Sesame Seed Brittle Recipe

In this video, Betty demonstrates how to make Sweet and Crunchy Sesame Seed Brittle. This is hard candy, packed with sesame seeds. We bought the sesame seeds on our recent field trip to Happy Meadow Natural Foods in Berea, Kentucky. I only made a half-recipe of the Sesame Seed Brittle in this video, but I am giving the full recipe below: Ingredients (for the full recipe): 1 ¼ cups sesame seeds 2 cups sugar 2 tablespoons water 1 teaspoon vanilla extract Note: You will need a large skillet for this recipe. If you are using a cast iron or stainless steel skillet, you can use a metal spoon. If you are using a nonstick skillet, you may use a wooden spoon. Be sure your cooking utensils can withstand high heat. Cook 1 ¼ cups sesame seeds in your skillet over medium heat, stirring often for about 8 to 10 minutes, or until the seeds are golden brown. Remove the seeds from the skillet and place them on a plate while you prepare your candy mixture. Cook 2 cups sugar and 2 tablespoons water in the just-emptied skillet over low heat, stirring constantly, about 10 minutes, or until sugar is melted. Quickly stir in toasted sesame seeds and 1 teaspoon vanilla. Pour onto a well-greased metal pan or baking sheet. Quickly spread to desired thickness (about 1/8 to 1/4 inch), using a metal spatula. Cool completely–about 20 minutes. Break into pieces and store in an airtight container. Enjoy! –Betty :)

Betty’s Hot Butterscotch Sundae Recipe

In this video, Betty demonstrates how to make a luscious and refreshing Hot Butterscotch Sundae. The hot butterscotch sauce is composed of mainly of milk, brown sugar, and butter. Ladled the sauce over vanilla ice cream, and you have a great summertime treat! Ingredients (for full recipe): 1 ¼ cups milk 2 tablespoons cornstarch ¼ teaspoon salt ¼ cup light corn syrup 1 cup packed dark brown sugar 2 tablespoons butter vanilla ice cream In a saucepan, blend 2 tablespoons cornstarch and ¼ teaspoon salt into 1 ¼ cups milk. Stir in ¼ cup light corn syrup. Cook and stir over medium heat until mixture thickens and bubbles. Reduce heat to low and cook 2 minutes more, stirring occasionally. Remove from heat. Stir in 1 cup brown sugar and 2 tablespoons butter. Serve warm over vanilla ice cream. Store remaining sauce in screw-top jar. Serve chilled, or reheat to use. This makes about 1 ¾ cups of hot butterscotch heaven! Enjoy!!! –Betty 

Betty’s Chilly Day Hot Spiced Apple Cider Recipe

In this video, Betty demonstrates how to make her Hot Spiced Apple Cider. Its getting just the right time of year here in Kentucky when a nice, hot drink is appealing. This Hot Spiced Apple Cider is flavored with cinnamon, nutmeg, allspice, and cloves. You can make it with either apple cider or apple juice. Its great for children, too! Ingredients: 2 quarts apple cider (You may substitute apple juice, if you prefer.) ½ cup firmly packed light brown sugar 2 whole nutmegs 4 cinnamon sticks 16 whole cloves 16 whole allspice In a large saucepan, combine 2 quarts apple cider (or apple juice) and ½ cup brown sugar. Tie spices (2 whole nutmegs, 4 cinnamon sticks, 16 whole cloves, and 16 whole allspice) in a cheesecloth bag; crush with a mallet, and add to the saucepan. Bring to a boil. Reduce heat and simmer for 15 minutes. Remove spice bag, and ladle Hot Spiced Apple Cider into mugs and serve. This Hot Spiced Apple Cider tastes great with Bettys Pumpkin Molasses Muffins, and the two make a perfect combination during fall, winter, and early spring! Cheers!

Betty’s Apple Dippers with Caramel Dipping Sauce

In this video, Betty demonstrates how to make Apple Dippers. I use Granny Smith apples and make a dipping sauce from Kraft caramels. Ingredient (for about 2 people)s: 2 Granny Smith apples, washed and dried with paper towel (You may use a different variety of apple.) ½ bag (about 25) Kraft caramels, unwrapped ¼ cup half-and half (This is half milk, half cream. You may use more , if desired.) Place ½ bag unwrapped Kraft caramels in the top of a double boiler, with the water boiling below. Stir caramels continuously, until they melt. Add ¼ cup (or a little more) of half-and-half. Turn off heat and stir until caramel and half-and-half are combined and smooth. Let cool to room temperature. Slice 2 Granny Smith apples, removing seeds and core. To serve, place apple slices on a serving dish with caramel dipping sauce in a small custard cup at the side. These are delicious and great for kids! –Betty 
